EASY LAVENDER SIMPLE SYRUP
Delicately floral and beautifully balanced, this Easy Lavender Simple Syrup adds a subtle herbal sweetness without tipping into that dreaded soapy flavor. Perfect for enhancing cocktails, mocktails, lattes, lemonades, and more.

- To a 2 quart saucepan, add sugar, water, and lavender, and stir to combine. Over medium-high heat, continuously stir until sugar is dissolved, and bring to a boil.
- Once at a boil, reduce to low heat, and simmer for 2 minutes. Remove from heat, cover, and let syrup steep for 30 minutes.
- Double strain (see Note #2) through an extra fine mesh strainer over a large measuring cup (2 cup), and discard lavender buds. Using a small funnel, transfer syrup into an airtight glass bottle (12 ounce), and store refrigerated for up to 3 weeks.
Notes
- To ensure your lavender stays fresh and fragrant when you need it (i.e., if you don’t use lavender often), just purchase a smaller quantity. Private Selection® lavender flowers, comes in a 0.49 ounce size, and you can find this brand online or at grocery retailers like Kroger, Ralph’s, Walmart, Smith’s Food and Drug, and Instacart. If you want a larger quantity of good quality lavender for an economical price, then I recommend Anthony’s organic French lavender, which is imported from France and comes in a 5 ounce bag (find it on Amazon).
- Double straining works best if you use two measuring cups instead of bowls, making it easier to pour without spilling.
- Makes approximately 8 ounces. A total of 16 servings (1 tablespoon per serving).

Love the flavor of lavender in your drinks or when drizzled on your desserts? Made with dried lavender buds, this Lavender Simple Syrup has wonderful notes of lavender without tasting soapy. It adds a wonderful flavor in cocktails, mocktails, lemonades, and lattes. It’s also delicious in a glaze, or drizzled over ice cream, vanilla cake, or pound cake.
Using only 2 ingredients, this easy recipe for simple syrup takes only minutes to prepare and is a great make ahead recipe when you are entertaining, and dissolves easily in both cold or hot drinks.
How do you ensure the best results from this recipe?
My 6 Tips to Making Easy Lavender Simple Syrup:
1. Use culinary-grade lavender only. This is non-negotiable. Always choose dried culinary lavender (my two recommended brands are Private Selection® lavender flowers and Anthony’s organic French lavender). Decorative or craft lavender should not be used, as it can be far too bitter and will create that strong, soapy flavor you’re trying to avoid.
2. Less lavender goes a long way. Many recipes use much more or even less than my recipe. I’ve tested many ratios and found my recipe uses the perfect amount to give you that subtle infusion of lavender, without the overpowering floral taste. This ratio is perfect for everything from cocktails, mocktails, hot or cold drinks, to desserts.
3. Steep only 30 minutes. Any more can potentially be bitter, soapy, and overwhelm your drinks with medicinal notes. Less steeping will give you a more subtle flavor (you might not detect much lavender essence in your drinks). If you want a milder lavender flavor, I suggest steeping no less than 15 minutes.
4. The type of sugar you use is based on preference. I use organic cane sugar (from Trader Joe’s), but white granulated sugar (such as C&H brand) works just fine. White sugar keeps the flavor clean and allows the lavender to shine, along with being a lighter color amber. Organic cane sugar adds a slightly warmer sweetness, and comes out a bit more deeply colored amber syrup.
5. Strain thoroughly. Once the syrup is infused, be sure to double strain. This ensures there will be no trace of lavender bits in your finished syrup. Leaving any behind will also continue to intensify the flavor over time, which can quickly turn floral into soapy.
6. Store it properly. Keep your lavender simple syrup in an airtight glass jar or bottle in the refrigerator. Stored correctly, it typically lasts 2-3 weeks. If it ever looks cloudy or smells off, it’s time to make a fresh batch.
