APPLE KALE SMOOTHIE

This Apple Kale Smoothie is a refreshing, nutrient-packed blend that delivers an impressive 42 grams of protein in every serving.   1. Cut a cold, unpeeled apple into large chunks, and discard the core.
  2. To a high speed blender cup (see Note #3), add ice cubes, kale, flaxseed meal, chopped apple, almond butter, Vital Proteins Collagen Peptides, Greek yogurt, cinnamon, Ashwaghanda powder (if using), maple syrup, and cold water.
  3. Cover, secure lid, and blend until smooth (about 60 seconds). Pour into a tall 18 ounce glass, serve immediately, and enjoy!

Notes

  1. Baby kale leaves have tender stems and a much sweeter taste than larger kale leaves. If you cannot find baby kale leaves, just strip the leaves from the thicker stems and tear the leaves into smaller pieces. 
  2. The Honeycrisp apple adds a sweet flavor to this smoothie. For a more tart flavor, replace Honeycrisp apple with a green apple. If you prefer a thicker and colder smoothie, chop the apple into large chunks, place them in a Ziploc freezer bag, and freeze overnight.
  3. Use a high speed blender to create a lusciously thick smoothie. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe. 
  4. Makes one 18 ounce serving as a meal replacement (or 2 smaller 9 ounce servings).

My 5 tips to making the best Apple Kale Smoothie:

  1. High quality, organic ingredients are best. 

  2. I prefer using Honeycrisp apples for this smoothie, as they have a sweeter flavor than some of the others. The sweet apple counteracts the bitterness of the kale and requires less added sweetener (pure maple syrup). If you don’t like sweet smoothies, try a green apple instead.

  3. Although you can use any kind of kale in this recipe, I prefer using organic baby kale leaves as they provide a sweeter flavor and have tender stems that don’t need to be removed. If you cannot find baby kale leaves, just strip the leaves from the thicker stems and tear the leaves into smaller pieces.

  4. Use a good quality plain Greek yogurt. I like using Fage plain 0% Greek Yogurt or Siggi’s strained nonfat yogurt. Both are thick, creamy, and taste great. You want to avoid watery Greek yogurt for this recipe.

  5. Use a high-speed blender. It breaks down the ingredients much faster and provides a creamier smoothie texture. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work great for this recipe!
