LAVENDER LONDON FOG

This Lavender London Fog is cozy, creamy, frothy, and perfectly balanced with delicate floral notes and a subtle sweetness in every sip. Made with fragrant Earl Grey tea, my Easy Lavender Simple Syrup, two types of vanilla, and your favorite milk (dairy or non-dairy), this café-style drink is both comforting and elegant.

Ingredients

Instructions

  1. To a 16 ounce mug, add tea bags.
  2. Boil water, then pour over tea bags, and steep for 5 minutes (see Note #4). Once steeped, dunk them a few times, remove the tea bags, and discard.
  3. Add milk of choice to a 16 ounce tall borosilicate glass measuring cup/pitcher, and heat in the microwave for about 1 minute, or until hot but not boiling. Or, you can use a pan on the stovetop to heat the milk, then transfer to a tall narrow measuring cup/pitcher.
  4. To the hot milk, add vanilla bean paste, vanilla syrup, and Easy Lavender Simple Syrup. Using a handheld electric milk frother on low speed, whisk until frothy. To incorporate some of the foam into the milk, swirl and tap the pitcher a few times to get rid of the large bubbles.
  5. Slowly pour the frothy milk into the tea, serve immediately, and enjoy!

Notes

  1. You can also use decaf Earl Grey tea bags for this recipe. Keep in mind that it will be much weaker than regular caffeinated tea, so be sure to steep the decaf tea bags for about 5-7 minutes. 
  2. For a non-dairy milk alternative, unsweetened vanilla almond milk works best with the flavors in this drink recipe. If you are using dairy milk, try 2% milk or whole milk. Nonfat milk does not work well for a London Fog.
  3. Use organic vanilla bean paste instead of vanilla extract. Vanilla extract does not add the same level of flavor to this recipe. Aside from the strength of flavor, vanilla bean paste adds tiny specks of vanilla seeds (aka: vanilla caviar) throughout the milk and foam. 
  4. Depending on your preferred tea strength, you can steep the tea bags from 3-5 minutes. Depending on your preferred tea strength, you can steep the tea bags from 3-5 minutes, but keep in mind that the milk will dilute the tea significantly - so you want a strong tea.
  5. Makes one 10 ounce serving (16 ounces with froth).

Whether you prefer whole milk for extra richness or almond milk for a dairy-free version, this recipe is endlessly customizable. I prefer the flavor and texture of unsweetened vanilla almond milk in this recipe, as it has no sugar and a neutral taste that does not compete with the other flavors in this drink. How do you ensure the best results from this recipe?

My 5 tips to making a great Lavender London Fog:

  1. Use good quality tea. I like using Tazo organic Earl Grey tea bags. If you prefer a decaffeinated option, try Twinings decaffeinated Earl Grey tea bags.

  2. Please use filtered water for this recipe, as you don’t want to ruin this drink with the taste of chlorine in tap water. Be sure to use boiling water to ensure the tea steeps properly.

  3. Vanilla bean paste versus vanilla extract. Use organic vanilla bean paste instead of vanilla extract. Vanilla bean paste has a deeper flavor and vanilla seeds (aka: vanilla caviar) that add tiny vanilla specks throughout the milk and foam, which adds to the experience. Vanilla extract does not add the same level of flavor to this recipe. 

  4. All lavender syrups are not alike. Some are stronger or weaker, and the one you choose will impact the flavor of this recipe. Be sure to use my Easy Lavender Simple Syrup. It’s a simple recipe that can be made ahead of time and stored in the fridge for several weeks. 

  5. To get the best froth, it’s important to use the right tools. The size and shape of the measuring cup/pitcher makes a huge difference in the results of your foam. I love using this 16 ounce tall borosilicate glass measuring cup/pitcher, as it is microwave safe and the perfect shape for frothing milk. This handheld electric milk frother works perfectly on low speed, to yield a beautifully frothy milk without big bubbles. 

It’s time to customize and Pimp My Recipe. 

Pimp My Recipe:

  • Make it Decaffeinated: Replace the regular tea, with Twinings decaffeinated Earl Grey tea bags. Just be sure to steep it a little longer (about 5-7 minutes) to ensure it has the right strength to provide the right balance of flavor.

  • Make it Milder: If you are using regular caffeinated tea and prefer a milder tea flavor, then switch to this ratio. Use only 1 Earl Grey tea bag (steep for a full 5 minutes), and only 4 ounces unsweetened vanilla almond milk (or milk of choice). Use the same amounts for all other ingredients as noted in the recipe. 

  • Make the Classic London Fog: If you do not like the flavor of lavender, try making this recipe the classic way. Just omit the lavender simple syrup, and replace with 1 tablespoon of vanilla syrup. If you like it sweeter, use a total of 1 ½ tablespoons of vanilla syrup instead.
